Are Idaho Potatoes Floury

When I first came to America I found the potatoes to be too waxy. It’s hard to find a good, floury potato like you get in Ireland. After much trial and error I found russet or Idaho potatoes are the mealiest or flouriest. Yukon Golds are waxy or soapy, as we might describe them in Ireland.

What kind of potatoes are floury?

Some floury varieties are Desiree, Estima, King Edward, Maris Piper, Rosamunda, Early Puritan, Evergood, Linzer, Melody, Blue Congo, Porvita and Red Baron. Mashed potato is traditionally made from floury potatoes, although there are chefs who say that waxy potatoes give a better, smoother mash.

Is Idaho a starchy potato?

Russet, Idaho and Yukon gold potatoes are starchy and great for baking, mashing and deep-frying. Their high-starch content produces an even colour when frying and their starch granules swell as they boil for the fluffiest mashed potatoes every time.
