Rillettes can be kept in the fridge for up to six months provided you pack them into clean jars with no air pockets and cover the surface with a good 5mm of clean rendered fat.
How do you store rillettes?
If properly covered with fat, pork rillettes should be shelf stable in a cool, dark place for up to 6 months. But you could also keep them in the fridge or freezer. Just make sure to serve them at room temperature.
Can rillettes be frozen?
This is an old fashioned method of preserving meat, so technically, the rillettes will keep for 6 weeks in the fridge in sterilised containers. I prefer to freeze in a plastic container for up to a month or keep in the fridge for a week.
