Can You Eat Aspic?

If made from meat, aspic has a mildly meaty taste. It is usually served in thin slices. When you consume aspic, the heat from your mouth will melt the aspic. This forms a warm broth in your mouth that surrounds the food that has been placed in the aspic.

The inedible aspic is never for consumption and is usually for decoration. Aspic is often used to glaze food pieces in food competitions to make the food glisten and make it more appealing to the eye. Foods dipped in aspic have a lacquered finish for a fancy presentation.

Why did people stop eating aspic?

Gelatin by itself (only the collagen) requires purification to remove the flavor usually imparted by making aspic from reduced stock. Prior to a process invented in 1847 by Peter Cooper to produce powdered gelatin, aspic & the like were consumed exclusively by the rich.
