The jars need to be sterilized because the ferments sit there for a week or more, and that environment needs to be as clean as possible.

How do you sterilize a fermented jar?

  1. Give your jars a wash in hot soapy water or run them through the dishwasher without any cleaning liquid.
  2. Put them into the oven at 110°C (230°F).
  3. leave for 10-15 minutes or until they are dry.
  4. Take them out of the oven and allow to cool.

What happens if you don't sterilize jars?

According to The National Center for Home Food Preservation, jar sterilization is not required for safe preserving if you'll be processing your filled jars in a boiling water bath canner for 10 minutes or more. That's because harmful microorganisms will be destroyed during processing.
