Mid-summer is the time to find and dig up wild horseradish root. It can often be found on roadsides and edges of fields, in the northern part of the country. The plant has leaves very similar to red radishes that you would grow in your garden, only much bigger, bright green and shiny.
Where does horseradish grow?
Horseradish prefers rich, fast-draining soil and full sun. However, the perennial will thrive in almost all conditions, except deep shade or constantly wet soil. Prior to planting, choose a spot far removed from any other plants you care about. Horseradish spreads quickly and can soon take over your garden.
Can I dig up wild horseradish?
In reality, unless you want huge quantities, harvest the roots any time you can dig (though in spring the young roots will be thin). Thin out any very small or crooked roots as you go, otherwise the plant becomes overcrowded. The leaves are edible, though they toughen with age.
