Go to Type > Create Outlines to get the text as a path. Copy it, and Paste in Place (Ctrl/Cmd-Shift-V). Select the copy and change the stroke to white, and select no fill. This should give you two objects, the original text with a fill color and no stroke, and a copied version with only a stroke.
