Its presence in wine is often indicated by increased presence of acetic acid and thus a high volatile acidity. This organism can also be identified by its rod shaped cells, and the clear zones it forms on plates with CaCO3. Acetobacter orleanensis is also catalase positive.

According to Kluyver and van Niel,a organisms belonging to the genus Acetobacter are ellipsoidal to rod-shape in form, immotile or motile and do not form endospores. They oxidize various organic compounds and show a marked tendency to yield acids as products of oxidation and they are adapted to life in acid media.

How do you stop Acetobacter?

To prevent high volatile acidity levels (caused by Acetobacter), make sure all surfaces that the wine comes in contact with are sanitized. Also avoid barrels that have contained vinegar or wines with very high VA levels. Adding SO2 (sodium dioxide) to the wine will inhibit the growth of this bacteria.
