Is Butter Bitter

Salted butter was developed to prevent spoilage, and to mask the taste of rancid butter. A sour-bitter taste is identifiable with rancidity (i.e. soapy, baby-vomit, blue cheese). Rancid butter becomes yellow to brown and the flavor becomes harsh.

Why does my butter taste bitter?

Streptococcus bacteria in the butter produces a malty or sour taste. Things like medications and pesticides can make butter taste like chemicals. If the butter has a harsh, sour-bitter taste (like soap or blue cheese), it is most likely rancid. When butter is rancid, it turns a brownish color.

How do you make butter less bitter?

Add 1/2 cup of ice water to the bowl, and using a spatula, press the butter into the ice water. It will quickly become cloudy with buttermilk. Pour off the cloudy water, add another 1/2 cup of ice water to the bowl, and keep pressing. Repeat until the water is clear.
