Because only aqueous solutions have pH levels, vegetable oil has no pH value. Likewise, other oils such as animal and petrochemical oils also have no pH value. Acidity as it relates to flavor should not be confused with an oil’s fatty acid content.

Is oil an acid base or neutral?

With very few exceptions, mineral oil-based or synthetic base oils are neutral, i.e. they have a pH value which is around 7 on a scale of 0 (extremely acidic) to 14 (extremely alkaline).

Is there an acidic oil?

Virgin olive oil is characterized by acidity between 0.8% and 2%, while lampante olive oil (a low quality oil that is not edible) features a free acidity higher than 2%. The increase of free acidity in olive oil is due to free fatty acids that are released from triglycerides.
