My Question Used Com. Android. Contacts, Com. Android. Dialer, Com. Android. Mms, Ect?

Would these things show up in, My Activities, if you didn't use them, or could anybody else from a phone make this happen? I believe I know the answer to this question, but my gf keeps insisting she is not using these things even when I show. Plus would this stuff show up under, my activities, if she was using hidden apps or something I couldn't find? Thank you for any help or advice on this matter
