Faster speeds would help with processing fibrous ingredients, and you don't have a lot of options for adjusting the speed based on your recipe.

However, you get faster speeds when using the personal jar (minimum 13500 RPM and maximum 16500 RPM), which helps with blending silky smoothies and shakes. The food processor has much slower speeds (minimum 2000 RPM and maximum 2500 RPM), which is expected for a food processor since you don't need super-fast speeds for slicing and chopping.
