Use “on holiday”, or – in American English – “on vacation”. This year there are three national holidays in May. I'll see you after the Christmas holidays.

Which is correct holiday or holidays?

We use the plural noun holidays and holiday in similar ways: We are all going to Croatia for our holidays this year. We are all going to Croatia for our holiday this year.

Do you say in the holidays or on the holidays?

In BE, when referring to school holidays (the weeks around Easter and Christmas, and during the summer), we would say 'in the holidays'. But never 'in holiday/s' without the article.
