Stirring at any step in the pour over making process is generally frowned upon and not preferable. Stirring generally creates an inconsistent brew- it can agitate the grounds too much, causing over, or even under, extraction.

Should coffee be stirred?

The coffee starts to separate in the cup and so stirring recombines all the essential elements and therefore creates a more balanced and full flavoured experience. Stirring also reduces the temperature of the beverage which further enhances the flavour.

When should you agitate coffee?

Agitation. Stirring the coffee-water infusion increases the extraction rate of soluble solids. Keep in mind that pouring water over the grounds causes agitation. In immersion brew methods it is important to agitate (stir) the brew again during the dwell time.
