Should Fuel Pressure Drop When Accelerating?

In steady driving & light acceleration, pressure doesn't drop and stays around 40 psi. In hard acceleration, datalog says fuel flow is 200-340 lb/hr. Fuel pressure start to drop when fuel flow exceeds 200. Hey, if it's a new fuel system, you need to check the filters.

Should rpm increase fuel pressure?

It is strictly for low rpm drivability and idle quality. Unless you have a turbo or supercharged car. Then you need a reference for increasing fuel as boost increases.

Does fuel pressure drop under load?

Yes, slightly. If the regulator port is correctly connected to manifold vacuum, the gauge pressure will drop under high vacuum conditions (that's what it's supposed to do). But you said that the port is not connected to the manifold, so the the fuel pressure should hold at WOT.
