Should You Cook Vegetables Before Dehydrating?

Vegetables
A general rule of thumb for dehydrating- if you eat it raw then there is no need to pre-cook the food before the drying. Vegetables like corn, broccoli and celery require blanching before dehydrating. Blanching is cooking the food item in boiling water then putting it in cold water.

How do you prepare vegetables for dehydration?

Procedure
  1. Bring water to a boil. Add dried vegetables, bouillon and seasonings.
  2. Simmer about 20 minutes, or until vegetables are tender though chewy. (Freshly dried vegetables will not take as long to reconstitute as those that have been stored for a long time.)

Can you dehydrate raw vegetables?

Vegetables dehydrate well, but because they contain less acid than fruits, vegetables typically need to be dried longer until they are brittle. Vegetable options for dehydrating include onions, potatoes, turnips, corn, peas, celery, beets and carrots.
