Are salt prunes healthy?
Umeboshi are a good source of polyphenols, which are thought to reduce the risk of diabetes, help lower blood pressure, prevent hardening of the arteries, and boost calcium absorption.
How do you make salt prunes?
- Seal the jar, then turn upside down once or twice to make sure the plums are evenly coated in salt.
- Leave the plums in a cool dark place for 2 weeks, turning every other day.
- After two weeks the plums will be ready to serve.
