At its best, camel meat tastes much like lean beef. But certain cuts can be tough, and if the meat comes from an old camel, it can also taste gamey. Hashi had used a shoulder cut, and neither he nor his customers were happy with the results.
Is camel meat expensive?
As a novelty item, ground camel meat clocks in at less than US$20 per pound — substantially more than the US$4-and-change average price of ground beef in the United States but modest in comparison with other “exotics,” such as imported and domestic alligator loin, wild boar and python.
Camel meat is nutritionally as good as any conventional meat source, in fact has an edge over beef or lamb due to its low intramuscular fat, low cholesterol content, and high iron content. Camel meat quality is a function of age, breed, and type of muscle consumed.
