What Is Edible Lime

The chemical lime in the form of Calcium Hydroxide (aka Edible Lime, Hydrated Lime, CaH2O2) is used in some food processing, and has been for millennia. Lime (in the form of Calcium Hydroxide) is used in South America in processing corn. Corn is soaked in water to which Calcium Hydroxide has been added.

How do you make edible limes?

  1. Heat your calcium carbonate directly on the flame until it becomes red hot.
  2. Do this for about 2-3 minutes.
  3. The rock will decompose on heating to create calcium oxide (quicklime) and carbon dioxide.

How is food grade lime made?

As mentioned above, hydrated lime is produced by first heating limestone in a kiln (calciner) to remove carbon dioxide and form quicklime. To improve the handling characteristics of the quicklime, a controlled amount of water is then added to form calcium hydroxide, commonly referred to as hydrated lime.
