What Is Shaki Meat

Fresh cow stomach (tripe) or “saki” (pronounced “shaki”) is another cow part that is sold as meat at local markets. Due to its texture and the longer period required to cook it for tenderness, it is fondly called “towel”.

What does a tripe do?

Tripe is an excellent and generally inexpensive source of lean protein. Protein helps keep you full and allows your body to repair damaged tissue and build muscle. A three-ounce serving of tripe contains 10 grams of protein, which is about 20% of average daily requirement.

How long do you cook Shaki for?

  1. Combine the shaki, tomato sauce and 1/2 cup of water and place over low-medium heat.
  2. Season with seasoning cube.
  3. Cook till shaki is tender yet slightly crunchy (depending on the tenderness of the uncooked shaki, this could take ten minutes or more).
