Sorachi Ace hops are mainly used as a bittering hop, but with their intense lemon flavor and aroma, as well as light dill, tea, and coriander notes, some brewers use them for flavor. These hops are great in saisons, IPAs and wheats, although the extreme lemon makes them ideal for any summer beer.
What happened to Sorachi?
A cross between British Brewer’s Gold, Japanese “Beikei No. 2” and the famed Czech Saaz, it had a unique lemony-herbal scent, but this hop was odd and ended up being quickly banished to a laboratory. In 2008, the Sorachi Ace hop was quietly revived by a family farm in Washington State.
What do Motueka hops taste like?
In the nose it has a bright and lively citrus quality of lemon and lime along with some tropical, floral, and stone fruit whispers. Often the tropical fruit comes through more prominently in the flavor, along with floral and spicy/herbal notes (often hinting at rosemary and basil).
