Why does sweet taste bitter?
Activation of the sweet taste receptors T1R2 and T1R3 by a sweet substance induces the activation of signaling proteins residing within the cell, namely: α-gustducin, PLC-β2, IP3R and TRPM5 [13]. Interestingly, scientists discovered that the same repertoire of signaling proteins is required for bitter taste perception.
