When to Add Consomme?

If adding herbs and garnishes, they should be added at the very last minute to preserve the consommé's transparency. Consommé is sometimes served with something floating in it: chicken or fish quenelles, a poached egg, pasta, finely diced vegetables (called brunoise), or sliced chicken breast are all classic options.

How do you use consomme?

Serving Consommé

Consommé is often served as an appetizer and is frequently served with a simple garnish of vegetables cut in brunoise or julienne. Another feature of its high gelatin content is that it will jell when it cools, making it the basis for preparing aspic.

Should a consomme be clear or cloudy?

A crust will form on the top that will absorb all the impurities in the consomme that make it cloudy. Let the consomme simmer until clear. Strain by moving crust to the side and pouring through cheese-cloth without breaking the crust. The resulting consomme should be crystal clear, with no impurities.
