When to Cut Nopales?

Nopales are easily propagated by cutting an existing cactus pad off a mature plant. Be sure to use a sharp, clean knife and cut a mature pad, one that is at least six months old. Keep the cutting in a well-ventilated area until it forms a firm callus where you cut it, which will take about two weeks.

How do you know when nopales are ready?

Brush the oil onto the nopales, and sprinkle on the salt and pepper. Grill on direct, medium heat, and flip once it is slightly charred, about two minutes. Grill for another two minutes – you'll know they're ready when they are soft and dark green.

How do you harvest and cook nopales?

Sauté nopalitos in butter or oil and serve. Grill until slightly browned, slice into strips and toss with a squeeze of lime and a little bit of olive oil. Dice and cook in an ungreased pan with chunks of onions, one or two cloves of garlic until no longer slippery, about 5 minutes, then rinse.
