Reverse searing involves cooking on a low heat in an oven or on a grill. When the steak reaches an internal temperature of 10°F below your desired temp, sear both sides for a minute each on a smoking hot surface. I like to either get my grill grates as hot as possible or heat up a cast iron pan to the point of smoking.

Pull your steak from your cooker after it has reached an internal temperature of 120 degrees. Let the steak rest 10 minutes. We are shooting for an internal final temp of 130 - 135 (medium rare). Increase the temp of your grill to at least 500 while the steak is resting 10 minutes.
