Brillat Savarin is one of France's classic triple créme cheeses. Production is industrial, and the cheeses are made by three dairies located in the Ile de France region; Fromagerie Fermiere de Juchy, Societe Fromagere de la Brie or Rouzaire's Fromagerie de Pre-Foret.
How is Brillat-Savarin made?
The milk is molded into wheels which are about 4 inches in diameter and 4 centimeters thick, before being aged for a minimum of three weeks. Brillat-savarin is uncooked and un-pressed so the outside is soft with a white mold. When fresh, this is a delectably soft, creamy cheese, with a buttery colored interior.
What does Brillat-Savarin cheese taste like?
A matured Brillat-Savarin has a typical white, bloomy rind with an interior paste that is buttery-white in colour. The texture is dense, moist, and slightly chalky with enough lusciousness and creaminess for a triple cream cheese. Flavours are of butter, salt and cream with hints of mushroom, nuts and truffles.
