Q: We recently dined at The Nauti Dawg Marina Cafe in Lighthouse Point. It was a hot evening, and the menu offered a chilled melon soup. I have never tasted any chilled soup that was so delicious. Can you please convince the chef to share the recipe? — Leslie Hammer, Pompano Beach
A: Chris Canfield, executive chef of The Nauti Dawg Marina Cafe (2841 Marina Circle, Lighthouse Point; 954-941-0246; nautidawg.com), serves a weekly rotating menu of soups made from scratch. He added a cantaloupe soup to the rotation after the popularity of his gazpacho took off.

“During Florida’s summer months, the gazpacho is especially popular because it is so light and refreshing,” he said. “I wanted to offer another chilled soup and had a case of cantaloupes, which inspired me to develop the recipe.”
Recipe: Nauti Dawg’s Chilled cantaloupe soup
2 cantaloupes, peeled and diced
1 1/2 cups club soda
1 cup orange juice
2 tablespoons sugar
Fresh mint sprigs, for garnish
1 Place ingredients in 4-quart container. Using a stick blender, blend until smooth. Alternatively, working in batches, blend ingredients in a blender and transfer to a large container.
2 Refrigerate until chilled, about 2 hours.
3 To serve, ladle into chilled serving bowls and garnish with fresh mint sprigs.
Makes 6 servings.
