How do you keep raw honey from crystallizing?
When the temperature of the honey dips below 50°F, the crystallization process will accelerate. Don't store honey in a chilly basement or unheated mudroom. To slow crystallization naturally, store your honey at room temperature or warmer (the warmer the better). Store honey in glass jars instead of plastic.
What if honey does not crystallize?
Honey that has (in my opinion) been overheated will not crystalize quickly. Honey that has never been heated will crystalized more quickly and taste much better. All honey will crystalized eventually but some, like Tupelo, crystalize VERY slowly.
